[Seasonal Recipes: Summer Edition]

  • Cauliflower florets
  • Hard-boiled eggs, chopped
  • Celery, chopped
  • Yoghurt
  • Dijon mustard

Fresh dill, chopped
Salt and pepper
Toasted almonds or pine nuts (optional garnish)

Instructions

  1. Steam the cauliflower florets until tender but still firm. Let them cool.
  2. In a large bowl, combine the steamed cauliflower, chopped hard-boiled eggs, and chopped celery.
  3. In a separate small bowl, mix Yoghurt, Dijon mustard, chopped fresh dill, salt, and pepper to make the dressing.
  4. Pour the dressing over the cauliflower mixture and toss to coat everything evenly.
  5. Cover the bowl and refrigerate for at least 1 hour before serving.
  6. Serve topped with toasted almonds or pine nuts
