This can also be made into a cake, with whipped heavy cream as frosting

【Makes 12】

  • 1 cup all-purpose flour
  • 1.25 cup almond flour
  • 0.3 cup granulated sugar
  • 3 teaspoons baking powder
  • 0.4 teaspoon salt
  • 1 teaspoon almond extract
  • 2 teaspoons vanilla extract
  • 0.75 cup canola oil
  • 0.75 cup Greek yogurt (or plain whole-fat yogurt)
  • 4 large eggs

Instructions

  1. Mix all ingredients in a mixing bowl. The mixture has a paste-like consistency.
  2. Put the mixture into a cupcake pan
  3. Bake for 20 minutes at 350ºF/175ºC (convection heat)
