This can also be made into a cake,
with whipped heavy cream as frosting

Ingredients

【Makes 12】

  • 1 cup all-purpose flour

  • 1 and ¼ cup almond flour

  • ⅓ cup granulated sugar
  • 3 tsp baking powder
  • ⅖ tsp salt
  • 1 tsp almond extract
  • 2 tsp vanilla extract
  • ¾ cup canola oil
  • ¾ cup greek yogurt (or plain whole-fat yogurt)
  • 4 large eggs

Instructions

  1. Mix all ingredients in a mixing bowl. The mixture has a paste-like consistency.
  2. Put the mixture into a cupcake pan
  3. Bake for 20 minutes at 350ºF/175ºC (convection heat)
