  • Cooked chicken breast, shredded or chopped
  • Greek yogurt
  • Diced cucumber

Instructions

  1. In a bowl, mix the shredded or chopped chicken breast, Greek yogurt, diced cucumber, diced red onion, and chopped fresh parsley.
  2. Add a squeeze of fresh lemon juice to the mixture.
  3. Season with garlic powder, salt, and pepper to taste.
  4. Toss everything together until the chicken salad is well coated with the Greek yogurt dressing.
  5. Serve the Greek yogurt chicken salad on its own or in lettuce wraps.
