Instructions
- Preheat your oven to 375°F (190°C).
- Cut the squash in half lengthwise and scoop out the seeds.
- Place the squash halves on a baking sheet, cut side up, and roast in the oven for 30-40 minutes or until the flesh is tender and can be easily shredded with a fork.
- In a skillet, melt the butter over medium heat, and add the minced garlic. Cook for 1-2minutes until fragrant.
- Scrape the squash flesh into the skillet and toss to combine with the garlic and butter.
- Add grated Parmesan cheese and season with salt and pepper. Cook for an additional 2-3 minutes.
- Garnish with fresh parsley and serve.
