[Seasonal Recipes: Autumn Edition]

  • 1 medium squash
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley, chopped, for garnish
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the squash in half lengthwise and scoop out the seeds.
  3. Place the squash halves on a baking sheet, cut side up, and roast in the oven for 30-40 minutes or until the flesh is tender and can be easily shredded with a fork.
  4. In a skillet, melt the butter over medium heat, and add the minced garlic. Cook for 1-2minutes until fragrant.
  5. Scrape the squash flesh into the skillet and toss to combine with the garlic and butter.
  6. Add grated Parmesan cheese and season with salt and pepper. Cook for an additional 2-3 minutes.
  7. Garnish with fresh parsley and serve.
