Instructions
- Preheat your oven to 375°F (190°C).
- Cut the tops off the bell peppers, remove the seeds and membranes, and set aside.
- In a skillet, cook the ground turkey or chicken over medium heat until browned. Drain any excess fat.
- In the same skillet, add the diced onion and garlic and cook for a few minutes until softened.
- Stir in the cauliflower rice, diced tomatoes, Italian seasoning, salt, and pepper. Cook for an additional 5 minutes.
- Spoon the turkey or chicken mixture into the bell peppers, pressing down to pack the filling.
- Place the stuffed peppers in a baking dish and cover with foil.
- Bake in the preheated oven for 25-30 minutes.
- Remove the foil, sprinkle shredded mozzarella cheese on top of each pepper, and return them to the oven for an additional 5-10 minutes, or until the cheese is melted and bubbly.
