[Seasonal Recipes: Summer Edition]
Instructions
- Use a spiralizer to turn the zucchini into noodles (you can also buy these from most large grocery stores)
- If adding protein, cook this separately and set aside.
- Heat a small amount of olive oil in a skillet over medium heat.
- Add the zucchini noodles and sauté for 2-3 minutes until they are tender-crisp.
- Remove the skillet from the heat and mix in the pesto sauce.
- Stir in sundried tomatoes.
- Serve the zucchini noodles with pesto and cherry tomatoes while still warm.
- Add parmesan before serving
