[Seasonal Recipes: Summer Edition]

  • Zucchini
  • Pesto sauce (homemade or store-bought)
  • Sundried tomatoes
  • Parmesan (optional)
  • Add grilled chicken or shrimp for protein

Instructions

  1. Use a spiralizer to turn the zucchini into noodles (you can also buy these from most large grocery stores)
  2. If adding protein, cook this separately and set aside.
  3. Heat a small amount of olive oil in a skillet over medium heat.
  4. Add the zucchini noodles and sauté for 2-3 minutes until they are tender-crisp.
  5. Remove the skillet from the heat and mix in the pesto sauce.
  6. Stir in sundried tomatoes.
  7. Serve the zucchini noodles with pesto and cherry tomatoes while still warm.
  8. Add parmesan before serving
